Auckland Hotel and Chefs Training School was first established in 1986 and is the only private hospitality and chefs’ training school of its type in central Auckland. AHCTS Teaching staff and management have strong industry relationships which provide valuable interaction between the school and industry to help reinforce the learning. The provider meets students’ needs and the learning generally provides value for the stakeholders. Work placement, which is included in the programmes, often leads to employment. The school currently offers Certificates and Diplomas in Cookery from level 2 to 5. Graduates are able to demonstrate a knowledge and understanding of food commodities, larder, sauce, soups, fish, meat, poultry, hot and cold dessert items, their application, commercial food costing and portion control.
